Black carrot extract is commonly used as a natural food coloring. The color of the extract is similar to that of the grape skin extract (red-green, magenta or purple-red). Food manufacturers prefer blackcarrot extract to concentrated grape skin extract because carrot color is more kosher-friendly and color from carrot extract preserves color better. The red color of black carrot extract is a natural substitute for a synthetic food colorant such as FD&C Red 40, or an insect colorant, known as carmine.
